: Potatoes, Methi Leaves, Salt, Sugar(Optional), Spinach Leaves (Optional), Cumin seeds, Asafoetida, Onion, Gimger, Chilli powder, Coriander powder, Garam Masala Powder.

Ingredients
:

3 potatoes ( Boiled )

1 cup Packed fresh Methi leaves

1/2 cup Chopped spinach leaves (optional)

1/2 tsp Cumin seeds

Pinch of asafoetida

1 small onion, finely chopped (optional)

1 tsp Grated ginger

1 tsp red Chilli powder

1/2 tsp Coriander powder

Garam Masala powder (2 cloves, 1/2″ cinnamon, 1 cardamom)

Salt to taste

1/2 tbsp oil

Instructions
:

  • Take Methi leaves and add big pinch of salt, pinch sugar and a cup of water to the methi leaves and let it rest for a few minutes. Then squeeze out the water from methi and keep aside.
  • Now take a vessel and and put oil and let it heat and add the grated ginger and asafoetida and saute for a few seconds. Then add onions and saute for 3 minutes. Add coriander powder and red chilli powder and combine. Add the chopped methi and spinach leaves and cook till wilted, approx 10-12 minutes.
  • Add the cubed boiled potatoes and salt and combine. Cook for 9-10 minutes. 4 Add garam masala powder and combine well. On high flame saute for 2-3 minutes, tossing the potatoes and turn off heat.
  • Goes well with chapatis.
